My Top 3 Slow Cooker Meals

You’ll notice a bit of a theme in this blog.  I LOVE spicy food like it’s nobody’s business.  🙂

1.Slow Cooker Taco Soup

This is my absolute favorite go-to slow cooker recipe.  I add a few nacho chips, grated cheese and a dollop of plain greek yogurt (less calories) to top it off!

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (16 ounce) can chili beans, with liquidtacosoup
  • 1 (15 ounce) can kidney beans with liquid
  • 1 (15 ounce) can whole kernel corn, with liquid
  • 1 (8 ounce) can tomato sauce
  • 2 cups water
  • 2 (14.5 ounce) cans peeled and diced tomatoes
  • 1 (4 ounce) can diced green chile peppers
  • 1 (1.25 ounce) package taco seasoning mix

Directions

  1. In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
  2. Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chili peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours.

2.Sweet and Smokey Pulled Chicken

This one is absurdly simple.  I grab a package of Club House Seasoning for ‘Sweet and Smokey Pulled Chicken’ and add a few quick things and voila!

  • 2 lbs Boneless Chicken
  • 1 cup Ketchup
  • 1/2 cup Brown Sugar
  • 1/2 cup Water

Directions

  1. Place chicken in slow cooker.
  2. Mix Seasoning Mix, ketchup, water and brown sugar until well blended. Pour over chicken. Cover.
  3. Cook 8 hours on LOW or 4 hours on HIGH. Remove chicken from slow cooker.
  4. Shred chicken, using 2 forks. Return chicken to slow cooker; mix and heat with sauce before serving. Serve on sandwich or slider rolls, if desired.

3.Easy Slow Cooker Chili

I love this one for the simplicity.  I usual brown my ground beef and dice my onion the night before.  In the morning I throw it all into the slow cooker before I head out the door to work.

Ingredients

  • 2 pounds ground beefchili
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 2 (14.5 ounce) cans Italian-style diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 1 (15 ounce) can kidney beans
  • 1 (15 ounce) can pinto beans
  • 1 can corn niblets
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 tablespoons white sugar
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon hot pepper sauce

Directions

  1. In a large stock pot lightly brown ground beef, and drain if needed.
  2. Add onion and garlic and cook until onion is translucent.
  3. Add tomatoes, diced tomatoes with chili peppers, tomato sauce, water, kidney beans, pinto beans, chili powder, cumin, sugar, salt, pepper and hot sauce. Simmer for 30 minutes and then serve.

Depression has been a fact of life for me for nearly 20 years now and I'm happy to say that I've finally started figuring out how to live with my demons. Today I have 3 kids, am in a stable relationship and have a (somewhat) normal relationship with my family. That's quite a feat considering some of the lows I've had and the things I've done when I was there. When I started this blog I wanted it to be mostly about depression and BPD, but as time went on I realized that I wanted it to be more than that. There are a lot of things that make me happy. And whatever makes me happy, in the end, contributes to a healthy life and mind. I don't have a grand plan.
